From My Kitchen: Lemon-Herb Tilapia

Happy Sunday y’all!

This post is an unlikely one {for my blog at least} but as I say in my bio, I just wanna share what I love. And, well… I love Lemon-Herb Tilapia! ^_^ For those of you wondering what to cook today, this one’s for you.

I had never heard of tilapia before 2006. One of my coworkers used to order tilapia with penne a la vodka from this Italian restaurant all the time and I’m like, “what’s TILAPIA?!” O_o After I got married in ’07, I was always on the hunt for new and exciting dishes since my husband came from a home where he had many “menu” options thanks to an Italian step-dad who loved to cook. I remembered the tilapia! Both my husband and I love seafood (okay, lemme qualify that statement- I don’t do mussels, clams, oysters or squid!!! O_O) A few clicks of the mouse later, I found a recipe that would be my go-to for years to come. I first made this dish for our second wedding anniversary. The hubby was pleasantly surprised and loved the meal!

Oooooh… ambiance!

INGREDIENTS:

  • 1 small lemon
  • 4 tablespoons butter, melted
  • 1 tablespoon fresh chopped parsely
  • 3/4 teasponn salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 4 tilapia fillets, about 6 ounces each

PREPARATION:

Preheat oven to 400°. Zest lemon and squeeze 1 tablespoon of lemon juice. In a small bowl, combine the peel and juice with softened butter, parsley, salt, pepper and green onions.

TilapiaMixButter a 12 x 8 baking dish. Place fillets in baking dish, folding thinner ends under as necessary. Top fillets with the butter mixture.

Tilapia1Bake for 15 minutes or until fish flakes easily with a fork.

Tilapia2DONEHow simple is that?! Whenever I cook this, I like to do as I did with that anniversary dinner and make a whole seafood party by putting together a little extra butter mixture for some shrimp and scallop skewers.

Tilapia4Feel free to play with this recipe as you like for more or less servings or to add your own twist. I love peppers (and they’re good for your hair!!) so these days I often add chopped green and red peppers to the fish just to give it some color.

It’s a tasty, healthy-ish dish that I’m sure you’ll love. Since it’s so quick and easy, it actually makes for a great meal during the week. I mean, who wants to slave over a hot stove for hours after slaving for The MAN all day?! LOL! Anyways, happy cooking and I’ll catch up with you lovely folks tomorrow.
